Instructions:

Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In a large bowl, whisk together the melted coconut oil, coconut sugar, apricot puree, vanilla extract, and almond milk until combined.
Add the dry ingredients to the wet ingredients and mix until just combined.
Divide the batter evenly among the 12 cupcake liners.
