These vegan marble cupcakes are a delicious and unique treat. The moist and fluffy cupcakes are made with a combination of vegan butter, sugar, and almond milk, and are swirled with a rich cocoa batter. The cupcakes are topped with a creamy vegan frosting and a sprinkle of vegan chocolate chips. These vegan marble cupcakes are sure to be a hit with everyone, vegan or not!

Instructions:

Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
In a large bowl, cream together the vegan butter and sugar until light and fluffy.
Add the almond milk, flour, baking powder, and salt and mix until just combined.
Divide the batter in half and add the cocoa powder to one half. Mix until combined.
Fill each cupcake liner with a spoonful of the vanilla batter, followed by a spoonful of the cocoa batter. Swirl the two together with a toothpick.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow cupcakes to cool completely before frosting.
