These vegan Margarita Magic cupcakes are a delicious and unique twist on the classic margarita. The cupcakes are made with a light and fluffy vegan vanilla cake batter, and are filled with a zesty lime curd. The cupcakes are then topped with a tequila-infused vegan buttercream frosting, and garnished with a sprinkle of lime zest and a maraschino cherry. Instructions:

Preheat oven to 350 degrees F (175 degrees C). Line a cupcake pan with paper liners.
In a large bowl, cream together the margarine and sugar until light and fluffy. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix until just combined.
In a small bowl, whisk together the almond milk, vanilla extract, lime juice, and tequila. Add the wet ingredients to the dry ingredients and mix until just combined.
Fill the cupcake liners about 2/3 full with the batter. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
To make the frosting, cream together the vegan butter and powdered sugar until light and fluffy. Add the lime zest and mix until just combined. Frost the cooled cupcakes and garnish with a maraschino cherry.
