Instructions:

Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
In a medium bowl, whisk together almond milk, coconut oil, and apple cider vinegar. Set aside.
In a large bowl, whisk together flour, baking soda, baking powder, salt, cocoa powder, and sugar.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
Fill each cupcake liner about 2/3 full with batter. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Let cupcakes cool completely before frosting.
To make the frosting, beat together vegan cream cheese and vegan butter until light and fluffy. Add in powdered sugar and mix until combined.
