These vegan S'mores cupcakes are the perfect combination of a classic campfire treat and a delicious cupcake. The graham cracker-flavored cupcake is topped with a fluffy marshmallow frosting and a chocolate ganache drizzle. Enjoy these vegan S'mores cupcakes as a special treat or for a summertime party. Instructions:

Preheat oven to 350°F and line a cupcake pan with paper liners.
In a medium bowl, whisk together the flour, graham cracker crumbs, baking powder, baking soda, and salt.
In a large bowl, cream together the vegan butter and sugar until light and fluffy. Add the vanilla extract and almond milk and mix until combined.
Add the dry ingredients to the wet ingredients and mix until just combined.
Fill the cupcake liners about 2/3 full and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cupcakes to cool completely before frosting.
To make the frosting, combine the vegan marshmallow fluff and coconut oil in a medium bowl and mix until light and fluffy.
